Lemon Meringue Pie

Ingredients:

Base (basic shortbread)

  • 50g Caster Sugar
  • 100g Butter, softened
  • 150g Plain Flour

Filling

  • 2 Lemons
  • 3 Egg yolks
  • 1 tin of Condensed Milk

Topping

  • 3 Egg Whites
  • 6 Tbs Caster Sugar
  • 2 drops of vanilla extract

Timings:

  • Prep: 15mins
  • Cooking: 1hr 15mins

Temperature:

  • 180C for the base
  • 140C to complete

Serves:

  • 6 to 8 (or 4 if you really really love pie)
