Ingredients:
Base (basic shortbread)
50g Caster Sugar
100g Butter, softened
150g Plain Flour
Filling
2 Lemons
3 Egg yolks
1 tin of Condensed Milk
Topping
3 Egg Whites
6 Tbs Caster Sugar
2 drops of vanilla extract
Timings:
Prep: 15mins
Cooking: 1hr 15mins
Temperature:
180C for the base
140C to complete
Serves:
6 to 8 (or 4 if you really really love pie)
