Stuffed Lamb Shoulder

Ingredients:

  • 1.5 - 2 kg/3½ to 4 lbs    Shoulder of Lamb
  • 3 tsp    Salt
  • 2 cups  Breadcrumbs
  • 125 g   finely chopped mushrooms
  • 2 Tbsp  fresh, chopped parsley
  • 2 tsp    fresh, chopped thyme
  • 1    small onion, finely chopped
  • 1    egg
  • 2 Tbsp    melted butter

Gravy

  • Juices from the pan
  • 1 Ltr / 2 pints Stock (made with the bones from the shoulder and whatever vegetables you had in your fridge)
  • 1 Tbsp plain flour

Timings:

  • Preparation: 20 mins
  • Cooking: 1hr 20mins to 1hr 45mins (depending on weight)

Oven Temperature

  • 170 C

Serves:

  • 10 to 12 depending on size of shoulder

Hamburgers

Ingredients:

  • 500g good quality Mincemeat
  • 1 Onion, finely chopped
  • 1 Egg
  • To taste: Ground Cumin, Garam Masala, Parsley, Sage, Nutmeg, Salt, Pepper, Coriander
  • 1 Oxo cube (beef)
  • Flour

 


Timings:

  • Prep: 10mins
  • Resting: 15mins to 1 hr
  • Cooking: 5 - 10 Mins

Serves:

  • 2 hungry or
  • 4 with side dishes

Luxury Macaroni Cheese


Ingredients:

  • 1 cup macaroni
  • 1 medium onion
  • 4 rashers of bacon
  • oil for frying

For the sauce

  • 50g butter
  • 2 Tbs plain flour
  • 300ml milk
  • 1 tsp vegetable bouillon powder
  • 150g mature cheddar cheese

Timings:

  • Prep:20 mins
  • Cooking:30 mins

Temperature:

  • 180C

Serves:

  • 2 as a hearty meal

  • 600 ml Double Cream
  • 250g Grated Cheddar Cheese
  • 300g Unsmoked Bacon (10 rashers)
  • 5 eggs
